Need Some Ideas for School Lunches?
We know how hard it can be to come up with new and different lunch ideas for the kids and we’re here to help. Here are 5 quick & easy ideas for school lunches.
Tortilla Roll-Ups
These are a great option because they can be made the night before and don’t need to be refrigerated (since there’s no mayo!). We use low-carb tortillas, coat them in cream cheese and add your favorite deli meat, cheese and spinach. If you roll them in wax paper, they hold up extremely well in the fridge overnight. Pack with veggie sticks and fruit!
Roast Beef Flats
For kids that enjoy a real sandwich, we offer a twist on the original. Use sandwich thins, mayonnaise, roast beef, lettuce and tomato to create a new classic. No ice pack? No problem! Substitute ghee or cream cheese for mayo. Pack with your favorite potato chips and some fruit.
Frittata & Fruit
Kids are often more motivated to eat something they made themselves. So after dinner, grab the leftover vegetables from the evening’s meal and have the kids help make muffin cup frittatas. Pack and serve with potato chips and fruit to round out this breakfast-turned-lunch!
Turkey & Orzo
On those extra-busy days, make lunch extra-easy. Just grab a pre-made salad (from your favorite Whole Foods or Central Market) and add extra protein to make it a real meal. Serve with fruit and coconut water.
Pick-A-Lunch
Really stumped for ideas? Just grab a bunch of snacks, add protein (like cubed turkey or ham) and serve. Who says snacks can’t make a meal? We sure don’t!
